Chocolate Earth Balls have to be one of my favorite snacks! Loaded with protein and other delicious ingredients this easy no bake recipe will surely get peoples attention in a very good way. The recipe makes over 30 Earth Balls so it makes a great potluck treat or if you’re making them for yourself they are great to stick in the freezer and grab when you please! Anytime of the day they are quite yummy! They are also a fun easy treat to make with kids!
1 cup peanut butter
1/3 cup honey or maple syrup
2 teaspoons carob powder or unsweetened organic cocoa powder
1/2 cup raisins
3/4 cup unsweetened shredded coconut, divided
1/2 cup semisweet chocolate chips
1/4 cup sesame seeds
1/4 cup finely chopped nuts (walnuts, pecans, etc.)
Optional – try other dried fruit besides raisins to put in the mix and have fun!
Before measuring the peanut butter, stir it up well.
Mix the peanut butter, honey and carob or cocoa powder until well combined. Stir in the raisins and 2 tablespoons of the coconut. Stir in the chocolate chips. Refrigerate for 1/2 hour to an hour.
Place the remaining coconut, sesame seeds and nuts into 3 separate bowls. Roll peanut butter mixture into 1 1/2 inch balls (or to your liking) and roll it in the toppings of your choice! Place in the fridge until served.
