Salsa Fresca

I’ve had a few requests for the Salsa Fresca recipe I swore by this summer and with an abundance of fresh tomatoes and cilantro how could I not? I made about 5 quarts of it each week! I even had free samples of salsa up at the Farm Stand and people asked if they could return with containers… eating fresh sure does taste and feel good.. Enjoy!

**Also, when I’d make this recipe sometimes I would quadruple it but the recipe as-is should make enough to last for a few days!

Salsa Fresca

2-3 tomatoes chopped
2-3 cloves of garlic
1/2 red onion
1/2 bunch of cilantro
1/2 (of a) lime juice
1 tbsp. of chili garlic sauce*
1-2 tbsp. of olive oil
salt and pepper
2 tbsp. apple cider vinegar
Optional – fresh jalapeno peppers (don’t go too crazy unless you can handle the heat! the chili garlic sauce is already pretty spicy)

(*the chili garlic sauce is a very key ingredient – you can get it at any grocery store)
