Since I discovered the recipe in Austin I’ve made these cookies a few times. They are delicious, moist, fluffy and vegan. They were a big hit each time I made them (and I made them different each time). They aren’t super sweet or oily cookies which makes me love them even more… enjoy!
p.s. they have everything in them you could possibly want… except maybe peanut butter!

2 cups spelt flour
2 cups rolled oats
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup non-dairy chocolate chips
1/2 cup raisins
1/2 cup chopped walnuts or pecans
1/2 tsp. cinnamon
1/2 cup softened coconut oil or safflower oil OR 1 large avocado
1 cup organic sugar or sucanat OR 2 really ripe bananas (frozen bananas that are whipped/food processed together with the vanilla and maybe a tablespoon of maple syrup is the way to go!)
1/3 cup applesauce
1 tsp. vanilla extract
*If your a coconut fan like me.. feel free to add in a 1/2 cup of coconut as well… mm mm..
Bake at 350. Whisk together dry ingredients. In another bowl, mix the oil or avo and sugar (if you used the banana concoction add this once it’s mixed together). Add the applesauce, vanilla and mix again until well combined. Add the dry ingredients to the wet and mix until all flour is absorbed. Add the chocolate chips, nuts and raisins if you haven’t already. Bake for 13 minutes or until golden. happy baking…mmmmmm..
